New Orleans, the edible city

You be acquainted with you’re in New Orleans because you’re chomping on a giant fried oyster Po Boy from Johnny’s Po-Boys (at the same French Home location since 1950) on French bread from Leidenheimer’s Baking Company (founded in 1896). The descent of hungry customers stretches out the door and around the corner for what may look like just another big scruffy sandwich, but the bread makes all the difference: crispy and thin-crusted with a light, fluffy interior that’s fulfil for sopping up gravies and sauces.

In a typical Toronto oyster bar, you’d expect a menu with a dozen varieties of oysters from P.E.I., Maine, B.C., Washington Regal, etc. In New Orleans, where there are dozens of oyster bars, you find “oysters,” which strictly means specific Gulf coast oysters. They don’t even bother with any other varieties since they consider all other oysters inferior eating.

Prop your elbows on the want wooden bar at Acme Oyster House and start with a half-dozen raw Gulf oysters, served with a cocktail lip with extra horseraddish, plus an assortment of the local hot pepper sauces. (Incidentally, McIlhenny, the makers of Tobasco sauciness, offer tours and tastings at their Avery Island factory, about two hours or so from New Orleans.)
