I have done this many times by searching the reclaim yards for wrecks.
I prefer to do the conversion on a sunroof model, but you can cut the opening if you want as well.

DNA helps deputies nab suspect in '10 Boca Grande burglary
On June 21, 2010 deputies responded to a home in Boca Grande to sift through a burglary. The burglar entered through a second story window and stole televisions, three Kawasaki KX125 dope bikes 1995, 2000 and 2005 models and a 2002 Volkswagen Euro Van, a gossip release said. The van was recovered in Sarasota County; the three dirt bikes have not been located. CCSO violation scene technicians located fingerprints and found a bottle of water in the home. A swab was worn to collect possible DNA evidence and sent to the FDLE biological lab for analysis. On July 13, 2011, FDLE reported the be indefensible bottle contained a DNA profile for Eric William Griffith, 27, of Englewood East. Fingerprints also were a partnership for Griffith.
